Love chicken! We eat alot of Rotisserie chicken from Sam's. But, we always have to cook it alittle longer. DH likes his with barbecue either in the microwave or baked. I like to fry mine alittle with Olive Oil and Old Bay. Other things we use the chicken for are Scalloped Chicken which is just with Dressing and Gravy and baked alittle while. Also homemade Chicken Soup with Vegetables and Noodles.
Oh my goodness we eat chicken 3-4 times a week. It is the best protein for my Diabetes and DH shouldn't eat a lot of red meat. Sometimes I don't even pull it out of the freezer until lunchtime and we have pretty fast meals. We always split a breast so I am always only cooking one.

We eat a lot of chicken! Dh keeps saying we're gonna be sprouting feathers soon.
One quick and easy recipe I use a lot is to mix mayo and parmesan cheese and spread it on chicken then sprinkle with bread crumbs. Bake at 450* for 20 mins. It always come out tasty, moist and tender.
