I made a Mexican lunch, it's also good for dinner. Quick and easy. Chicken tostadas and to drink hibiscus tea. For some reason in this area they call the tostadas, chalupas.
Chicken Tostadas
8 red corn tortillas tosted (6 inches)
1-1 / 4 cup refried beans, heated
2 cups of shredded cabbage
2 cups cooked and shredded chicken breast
1 tomato (tomato), chopped
1 avocado, chopped
1 cup shredded Cheese, any kind, but queso fresco is the best
1/2 cup Sour Cream or light sour cream
Sprinkle the beans on the tortillas and add all the ingredients on top.
Probably homemade "crab" rangoons (the fish is really a whitefish but tastes good) with a rice dish, maybe a green salad. If we have that, I need to come up with an alternate for Mom -- she's NOT a fan of any fish or seafood!
I think we're having some sort of red beans and rice. A dish Garrett learned to make in Spanish Class and probably a steak on the girl. He has a friend over now, and she's already eaten, so we decided to have a late dinner and eat when she leaves.
I ended up slicing a chicken breast Open putting provolone cheese in it put a chicken rub on it with salt and pepper and cooked it in the oven it was very good!
