On January 28th, National Blueberry Pancake Day brings the sweetness of blueberries to your pancake, flapjack, or hotcake.

Pancakes are the oldest breakfast food in history. Early pancakes consisted mostly of flour and milk and were more like biscuits. Eggs, milk, a leavening agent (such as baking powder), and fat were added later to create the fluffier, lighter pancake we know today.

Pancakes are delicious without any additional ingredients but when blueberries are added, they take on a freshness with a sweet and sometimes tart taste. Besides, adding blueberries gives nutrients to the pancake like vitamin K, vitamin C, manganese, and copper.

Adding blueberries to the pancake batter when mixing up the ingredients may result in a bluish hue. To avoid this, add them right after dropping dollops of batter to the hot griddle. This will prevent discoloration and allow you to place your blueberries in the perfectly so each bite gets a few berries.

ah, yes I love blueberry pancakes. I like the blueberries in the batter. My family likes chocolate chips in the batter

Oh I have never really liked blueberries. I did make pancakes this morning though only with fresh strawberries. So good!

I'm with Tracy on this one - I LOVE anything blueberry!! especially fresh picked ones . . .

they did serve blueberry pancakes for breakfast in the cafeteria at work yesterday morning, but I didn't get any though

I love blueberries, I prefer them fresh on top of waffles.
